Went to a healthy cooking expo on Saturday. Great ideas and substitutions for heavy ingredients. Here is a recipe from the cookbook they gave out:
Chocolate Crinkles
4 oz of bittersweet chocolate chopped
1/2 c canola oil
1/2 c sugar
2 tsp vanilla
1 egg plus 2 egg whites
1 c AP flour
1/2 c whole wheat flour
1/8 tsp salt
1/2 tsp baking powder
1/2 c powdered sugar
In a microwave safe bowl, microwave the choclate on high for 20 seconds, stir and continue to microwave at 10 second intervals until melted.
In a large bowl mix chocolate, oil, sugar and vanilla. Stir in egg and whites. In another bowl combine flours, salt and baking powder. Add flour mixture to chocolate mixture and stir until combined. Cover and refriderate for at least 3 hrs. or overnight.
Preheat oven to 350 degrees. Lightly coat baking sheets with nonstick spray.
Roll dough into 3/4 inch balls. Roll in powedered sugar and place about 2 inches apart on baking sheet. Bake for 10-12 mins . Immediately remove and cool on wire rack.
